- 4 warm pita breads
- 1 cup prepared tzatziki sauce
- 1 cup chopped cucumber
- 1 cup chopped tomatoes
- ½ red onion, thinly sliced
- ½ cup crumbled feta cheese
- Lemon wedges
- Fresh parsley or dill
- Kalamata olives, optional
Preparation
Step 1 – Cut the Chicken
Cut the chicken into pieces approximately 1½ inches in size.
Keeping the pieces similar in size helps them cook evenly.
Step 2 – Prepare the Marinade
In a large bowl, whisk together:
- Olive oil
- Lemon juice
- Garlic
- Oregano
- Salt
- Pepper
- Smoked paprika, if using
Add the chicken and toss until every piece is coated.
Cover and refrigerate for at least 30 minutes.
For stronger flavor, marinate for up to 2 hours.
Avoid marinating overnight because the lemon juice can begin changing the chicken’s texture.
Step 3 – Prepare the Skewers
If using wooden skewers, soak them in water for approximately 30 minutes.
Thread the chicken onto the skewers, leaving a small amount of space between the pieces.
Do not pack them too tightly.
Step 4 – Grill the Chicken
Preheat an outdoor grill or grill pan over medium-high heat.
Lightly oil the cooking surface.
Grill the skewers for 10–12 minutes, turning every few minutes.
Cook until the chicken is lightly charred and reaches an internal temperature of 165°F.
Remove from the grill and allow to rest for 3–5 minutes.
Step 5 – Warm the Pita
Warm pita bread on the grill for approximately 30 seconds per side.
Keep covered in a clean kitchen towel until ready to serve.
Step 6 – Assemble
Serve the chicken directly on skewers or remove it for pita wraps.

- Tomato
- Red onion
- Feta
- Herbs
- Lemon juice

Chicken thighs provide the juiciest result and are more forgiving on the grill.
Chicken breast is leaner but should be watched carefully to prevent overcooking.
The finished chicken should be lightly charred outside and moist inside.
