Ingredients
Dough
- 3 cups bread flour
- 2¼ teaspoons active dry yeast (1 packet)
- 1 teaspoon sugar
- 1 teaspoon kosher salt
- 1 cup warm water (105°–110°F)
- 2 tablespoons extra virgin olive oil
Sauce
- ½ cup crushed San Marzano tomatoes
- ½ teaspoon sea salt
- 1 tablespoon olive oil
Toppings
- 8 ounces fresh mozzarella, sliced
- 12 fresh basil leaves
- Extra virgin olive oil for drizzling
- Fresh cracked black pepper (optional)
- Freshly grated Parmigiano-Reggiano (optional)
Step-by-Step Instructions
Prepare the Dough
In a small bowl, combine the warm water, sugar, and yeast. Allow the mixture to rest for 5–10 minutes until it becomes foamy.
In a large mixing bowl, whisk together the flour and salt.
Pour in the yeast mixture and olive oil. Stir until the dough begins to come together.
Transfer to a lightly floured surface and knead for 8–10 minutes until smooth and elastic.
Lightly oil a clean bowl, place the dough inside, cover with a towel, and allow it to rise for 60–90 minutes or until doubled in size.
Prepare the Sauce
Mix together:
- Tomatoes
- Olive oil
- Salt

Authentic Italian pizza sauce is intentionally simple.
Build the Pizza
Preheat your oven to 500°F. If you have a pizza stone, place it in the oven while it preheats.
Stretch the dough into a 12–14-inch circle.
Spread a thin layer of tomato sauce across the dough.
Arrange slices of fresh mozzarella evenly over the top.
Bake for 10–12 minutes until the crust becomes golden brown and the cheese begins to bubble.
Immediately after removing from the oven:
- Scatter fresh basil leaves across the pizza.
- Drizzle lightly with olive oil.
- Finish with fresh cracked pepper if desired.

Don’t overload the pizza.
Authentic Neapolitan pizza uses surprisingly little topping. The crust, tomatoes, and mozzarella should all shine equally.

Serve on a wooden pizza board.
